Keto Cheesecake Bites

Are you looking for a low-carb dessert that won't ruin your keto diet? Look no further than keto cheesecake bites! These tiny treats are the perfect combination of creamy cheesecake and crunchy crust, all without the excess carbs and sugar.

In this article, I'll share with you my favorite recipe for keto cheesecake bites, as well as some tips for making them perfectly every time. Let's get started!

Ingredients

For the crust

  • 1 1/2 cups almond flour
  • 1/4 cup Swerve sweetener
  • 1/3 cup melted butter
  • 1/2 tsp vanilla extract

For the filling

  • 16 oz cream cheese, softened
  • 1/2 cup Swerve sweetener
  • 2 large eggs, at room temperature
  • 1 tsp vanilla extract
  • 1/4 cup heavy cream

Directions

  • Preheat your oven to 325°F. Twelve paper liners should be used to line a muffin pan.
  • Almond flour, sugar, melting butter, and extract of vanilla should all be well blended in a medium basin.
  • Every single paper liner's bottom should be uniformly pressed with the blend.
  • Bake the crusts for 10-12 minutes, until lightly golden brown. Take out of the oven, then let it cool down.
  • Cream cheese should be well beaten in an enormous mixing dish.
  • Add the sweetener, eggs, vanilla extract, and heavy cream to the bowl. Ingredients should be silky and velvety after a few minutes of medium-speed beating.
  • Spoon the cheesecake mixture into each muffin liner, filling each one about 3/4 full.
  • Bake the cheesecake bites for 20-25 minutes, until the edges are set but the center is still slightly jiggly.
  • Let the cheesecake bites cool to room temperature, then refrigerate for at least 2 hours, or until firm.
  • Serve and enjoy!

Tips for Making Perfect Keto Cheesecake Bites

  • Use room temperature ingredients. This will ensure that the filling mixes together smoothly and evenly.
  • Don't overmix the filling. Overmixing can lead to a lumpy, grainy texture.
  • Let the cheesecake bites cool to room temperature before refrigerating. That would stop moisture from growing across the cheesecake's top.
  • For up to five days, you may keep unused cheesecake pieces in the fridge in a tightly sealed container.

Advantages of Keto Cheesecake Bites

  • Low-carb: Each serving of keto cheesecake bites contains only 3 grams of net carbs, making it a perfect dessert for those on a low-carb or keto diet.
  • Sugar-free: The use of Swerve sweetener instead of sugar means that you can enjoy the sweetness of cheesecake without the blood sugar spike.
  • High in healthy fats: The almond flour crust and cream cheese filling provide plenty of healthy fats, which are essential for a keto diet.
  • Portion control: By making cheesecake bites instead of a full-sized cheesecake, you can easily control your portion sizes and avoid overindulging.

Ingredients in Detail

Almond Flour: Almond flour is a perfect low-carb flour substitute, making it a popular ingredient in keto recipes. It's made from finely ground blanched almonds, and it's high in healthy fats and low in carbs.

Swerve Sweetener: Swerve is a sugar substitute made from erythritol and oligosaccharides, which are both natural sweeteners. It has zero calories, zero net carbs, and doesn't cause blood sugar spikes, making it an ideal sweetener for keto recipes.

Cream Cheese: Cream cheese is the main ingredient in the filling of keto cheesecake bites. It's high in fat and low in carbs, making it a perfect ingredient for a keto diet.

Eggs: Eggs are used in the filling of keto cheesecake bites to help bind everything together and add structure to the cheesecake.

Heavy Cream: Heavy cream is added to the filling to make it creamier and richer in flavor. It's also a good source of healthy fats, which are essential in a keto diet.

Advantages of Keto Cheesecake Bites Over Ordinary Cheesecake

  • Low in Carbs: Traditional cheesecake is high in carbs due to its crust and sugar content. Keto cheesecake bites use almond flour instead of wheat flour and Swerve sweetener instead of sugar, making it a perfect low-carb dessert.
  • No Sugar Crash: Sugar is often used in traditional cheesecake recipes, which can cause a spike in blood sugar levels followed by a crash. Keto cheesecake bites use Swerve sweetener, which doesn't cause blood sugar spikes.
  • High in Healthy Fats: The use of cream cheese and almond flour in keto cheesecake bites means that they're high in healthy fats, which are important in a keto diet.
  • Perfect Portion Control: Keto cheesecake bites are individually portioned, making it easy to control your portion sizes and avoid overeating.

In A Nut Shell

In conclusion, keto cheesecake bites are a delicious and low-carb dessert option for those following a keto diet. By using almond flour and Swerve sweetener, this recipe delivers all the flavor of traditional cheesecake without the excess carbs and sugar. Give it a try and indulge in these guilt-free treats!
